Ingredients

  • 3 large Eggs
  • 2 cups Dashi stock
  • 6 medium Shrimp, peeled and deveined
  • 4 Shiitake mushrooms, sliced
  • 1 tsp Soy sauce
  • 1 tsp Mirin
  • 1/4 tsp Salt
  • 1 tbsp Green onion, thinly sliced(optional)

Instructions

  1. 1

Dissolve dashi in 2 cups warm water and let cool to room temperature (5 minutes).

  2. 2

Whisk eggs gently in a bowl — avoid creating bubbles — then combine with dashi, soy sauce, mirin, and salt. Strain the mixture through a fine sieve (5 minutes).

  3. 3

Divide shrimp and shiitake mushrooms between two small heatproof cups or ramekins, then pour the egg mixture over them (3 minutes).

  4. 4

Cover each cup with foil. Place in a steamer over simmering water, cover, and steam over low heat for 20-25 minutes until the custard is just set with a slight wobble (25 minutes).

  5. 5

Top with green onion and serve warm (2 minutes).
