Ingredients

  • 2 pieces Chicken Breast
  • 1 cup Cherry Tomatoes
  • 4 ounces Fresh Mozzarella Pearls
  • 0.5 cup Fresh Basil Leaves
  • 4 cups Mixed Salad Greens
  • 2 tablespoons Balsamic Glaze
  • 2 tablespoons Extra Virgin Olive Oil
  • to taste Salt and Black Pepper

    Season chicken breasts with salt, pepper, and 1 tablespoon of olive oil.

    Grill or pan-sear the chicken over medium heat for 5-6 minutes per side until cooked through. Let rest for 5 minutes, then slice into strips.

    Halve the cherry tomatoes and roughly chop or tear the fresh basil leaves.

    In a large bowl, toss the mixed greens with the remaining tablespoon of olive oil and a pinch of salt.
