Cajun Chicken Pasta

Boldly seasoned chicken breast served over pasta in a spicy, creamy bell pepper sauce.

Ingredients

  • 1 lb Chicken Breast
  • 12 oz Penne Pasta
  • 2 tbsp Cajun Seasoning
  • 1.5 cups Heavy Cream
  • 0.5 cup Parmesan Cheese
  • 1 medium Bell Pepper
  • 0.5 medium Red Onion
  • 2 tbsp Butter
  • 1 tbsp Fresh Parsley(optional)

Instructions

    Boil a large pot of salted water and cook penne according to package directions until al dente.

    Slice chicken into thin strips and toss thoroughly with 1 tablespoon of Cajun seasoning.

    In a large skillet over medium-high heat, melt 1 tablespoon of butter and sear chicken until golden brown and cooked through. Remove chicken and set aside.

    In the same skillet, add remaining butter and sauté sliced peppers and onions for 3-4 minutes until tender.

    Lower heat to medium and pour in heavy cream and the remaining Cajun seasoning. Bring to a gentle simmer.

    Stir in parmesan cheese until melted and the sauce begins to thicken.

    Add the cooked pasta and chicken back into the skillet. Toss well to coat everything in the sauce.

    Garnish with fresh parsley and serve immediately.
