Ingredients
- 6 oz oz spaghetti
- 5.2 oz oz Boursin Garlic & Fine Herbs cheese
- 4 cups cups baby spinach
- 1 tbsp tbsp olive oil
- 2 cloves, minced garlic
- to taste black pepper(optional)
- 2 tbsp tbsp grated Parmesan(optional)
- 1 tsp tsp lemon zest(optional)
Instructions
- 1
Bring a large pot of salted water to a boil and cook the spaghetti according to package directions until al dente, about 10-11 minutes. Before draining, reserve 1 cup of pasta water.
- 2
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- 3
Add the spinach to the skillet in handfuls, tossing until wilted, about 2-3 minutes.
- 4
Drain the pasta and add it to the skillet along with the Boursin cheese and 1/2 cup of the reserved pasta water. Toss over low heat until the cheese melts into a creamy sauce, 2-3 minutes, adding more pasta water as needed to loosen.
- 5
Season with black pepper, and finish with Parmesan and lemon zest if using. Serve immediately.
