Ingredients
- 4 pieces Chicken Breasts
- 0.5 cup Bourbon
- 1 cup BBQ Sauce
- 2 tablespoons Brown Sugar
- 1 tablespoon Apple Cider Vinegar
- 2 cups All-purpose Flour
- 1.75 cups Buttermilk
- 2 large Eggs
- 0.5 cup Melted Butter
- 1 teaspoon Smoked Paprika
- 1 tablespoon Baking Powder
- 0.25 cup Green Onions(optional)
Instructions
- 1
In a small saucepan, combine the bourbon, BBQ sauce, brown sugar, and apple cider vinegar over medium heat.
- 2
Simmer the glaze for 10-12 minutes until it reduces slightly and becomes thick and syrupy, then set aside.
- 3
Preheat your grill to medium-high heat and lightly oil the grates to prevent the chicken from sticking.
- 4
Season the chicken breasts with salt, pepper, and smoked paprika, then grill for 6-7 minutes per side until fully cooked.
- 5
During the last 3 minutes of grilling, generously brush the bourbon glaze over the chicken, allowing it to caramelize.
- 6
In a large bowl, whisk together the flour, baking powder, buttermilk, eggs, and melted butter until the waffle batter is mostly smooth.
- 7
Pour the batter into a preheated waffle iron and cook until golden brown and crisp.
- 8
Place a grilled chicken breast on top of each waffle, drizzle with extra glaze, and garnish with sliced green onions.
