Baklava with Honey Syrup

Ingredients
- 1 package Phyllo dough
- 1 lb Walnuts
- 1 cup Unsalted butter
- 1 tsp Ground cinnamon
- 1 cup Water
- 1 cup Granulated sugar
- 0.5 cup Honey
- 1 tbsp Lemon juice

Preheat oven to 350°F (175°C). Butter the bottom and sides of a 9x13 inch baking pan.

Toss the walnuts with cinnamon in a food processor and pulse until finely chopped.

Unroll the phyllo dough. Cut the whole stack to fit the pan. Cover with a damp cloth to prevent drying.

Place two sheets of phyllo in the pan, butter thoroughly. Repeat until you have 8 sheets layered.

Sprinkle 2-3 tablespoons of the nut mixture over the top. Layer two more sheets of phyllo, butter, and nuts. Repeat until all nuts are used.

The top layer should be about 6-8 sheets deep. Using a sharp knife, cut into diamonds or squares all the way to the bottom.

Bake for 50 minutes until golden brown and crisp.

While baklava bakes, make the syrup: Boil water and sugar until sugar is dissolved. Add honey and lemon juice. Simmer for 20 minutes.

Remove baklava from oven and immediately pour the cooled syrup over the hot pastry. Let sit for at least 4 hours before serving.
