Ingredients

  • 2 6 oz each salmon fillets
  • 1 cup sushi rice or short-grain rice
  • 1 avocado
  • 1 cup cherry tomatoes
  • 1/4 red onion
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 1 tsp honey(optional)
  • 2 tbsp cilantro(optional)
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Cook the rice according to package directions and keep warm.

  2. 2

Meanwhile, dice the tomatoes, thinly slice the red onion, and chop the cilantro. Toss in a bowl with 1 tbsp lime juice and a pinch of salt to make the salsa.

  3. 3

Whisk the soy sauce, remaining lime juice, honey, and sesame oil in a small bowl to make the dressing.

  4. 4

Pat the salmon dry and season with salt and pepper. Sear skin-side down in a hot oiled pan for 4 minutes, flip, and cook 3-4 minutes more until just cooked through.

  5. 5

Slice the avocado. Divide rice between two bowls, top with avocado, salmon, and salsa. Drizzle with the soy-lime dressing, sprinkle with sesame seeds, and serve.
