Ingredients

Servings:4
  • 2 cups Labneh (strained yogurt)
  • 4 large Garlic cloves, unpeeled
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Zaatar spice blend
  • 1 teaspoon Lemon juice
  • 1/2 teaspoon Sea salt
  • 1 tablespoon Fresh mint leaves(optional)
  • 1/4 teaspoon Aleppo pepper or red chili flakes(optional)
  • 2 pieces Warm pita bread for serving

Instructions

  1. 1

Preheat your oven to 400°F (200°C) and wrap the unpeeled garlic cloves in a small piece of foil with a drizzle of olive oil.

  2. 2

Roast the garlic for 20 minutes until softened, then remove from oven and let cool.

  3. 3

Squeeze the roasted garlic out of their skins into a small bowl and mash into a smooth paste using a fork.

  4. 4

In a medium mixing bowl, combine the labneh, mashed roasted garlic, lemon juice, and sea salt.

  5. 5

Whisk the mixture vigorously until the garlic is evenly incorporated and the labneh is airy.

  6. 6

Spread the labneh onto a shallow serving plate, creating decorative swirls with the back of a spoon.

  7. 7

Generously sprinkle the zaatar spice blend over the top and drizzle with the remaining extra virgin olive oil.

  8. 8

Garnish with fresh mint and Aleppo pepper before serving with warm pita or sliced cucumbers.
