Ingredients
- 2 cups Labneh (strained yogurt)
- 4 large Garlic cloves, unpeeled
- 3 tablespoons Extra virgin olive oil
- 2 tablespoons Zaatar spice blend
- 1 teaspoon Lemon juice
- 1/2 teaspoon Sea salt
- 1 tablespoon Fresh mint leaves(optional)
- 1/4 teaspoon Aleppo pepper or red chili flakes(optional)
- 2 pieces Warm pita bread for serving

Preheat your oven to 400°F (200°C) and wrap the unpeeled garlic cloves in a small piece of foil with a drizzle of olive oil.

Roast the garlic for 20 minutes until softened, then remove from oven and let cool.

Squeeze the roasted garlic out of their skins into a small bowl and mash into a smooth paste using a fork.

In a medium mixing bowl, combine the labneh, mashed roasted garlic, lemon juice, and sea salt.

Whisk the mixture vigorously until the garlic is evenly incorporated and the labneh is airy.

Spread the labneh onto a shallow serving plate, creating decorative swirls with the back of a spoon.

Generously sprinkle the zaatar spice blend over the top and drizzle with the remaining extra virgin olive oil.
