
Yakitori-style Salmon Skewers

Ingredients
- 1.5 lbs Salmon fillets, skinless and cubed
- 0.5 cup Soy sauce
- 0.5 cup Mirin
- 0.25 cup Sake
- 2 tablespoons Brown sugar
- 6 stalks Green onions, cut into 1-inch pieces
- 1 teaspoon Fresh ginger, grated
- 1 piece Garlic clove, minced
- 1 tablespoon Vegetable oil
- 1 teaspoon Toasted sesame seeds(optional)

Soak wooden skewers in water for at least 30 minutes to prevent burning during cooking.

In a small saucepan, combine soy sauce, mirin, sake, brown sugar, ginger, and garlic over medium heat.

Simmer the sauce for 8-10 minutes until it reduces by half and becomes a thick, glossy syrup; set aside to cool.

Thread the salmon cubes and green onion pieces onto the skewers, alternating between fish and onion.

Lightly brush the salmon skewers with vegetable oil and season with a tiny pinch of salt if desired.

Preheat a grill pan or outdoor grill to medium-high heat and place skewers on the grate.

Grill for 2-3 minutes per side, brushing generously with the yakitori glaze during the last 2 minutes of cooking.

Remove from heat once the salmon is opaque and the glaze is caramelized, then sprinkle with sesame seeds before serving.
