- 500 grams Chicken thighs
- 6 stalks Scallions
- 0.5 cup Soy sauce
- 0.5 cup Mirin
- 0.25 cup Sake
- 2 tablespoons Sugar
- 10 pieces Bamboo skewers

Soak bamboo skewers in water for 30 minutes to prevent burning.

In a small saucepan, combine soy sauce, mirin, sake, and sugar. Simmer over medium heat until the liquid reduces by half and becomes syrupy.

Cut chicken thighs into 1-inch bite-sized pieces. Cut scallions into 1-inch lengths.

Thread the chicken and scallions onto the skewers, alternating between them.

Preheat a grill or broiler to medium-high heat.

Grill the skewers for 3-4 minutes per side. Once the chicken is nearly cooked, brush generously with the tare sauce.
