Warm Apple Tarte Tatin

Ingredients

  • 6 large Granny Smith Apples
  • 100 grams Unsalted Butter
  • 150 grams Granulated Sugar
  • 1 sheet Puff Pastry
  • 0.5 teaspoon Cinnamon(optional)
  • 1 teaspoon Vanilla Bean Paste(optional)

    Preheat your oven to 200°C (400°F).

    Peel, core, and quarter the apples.

    In a 24cm ovenproof frying pan, melt the butter over medium heat. Sprinkle the sugar evenly over the melted butter.

    Cook the butter and sugar for 5-8 minutes until it turns into a deep amber caramel. Do not stir, just swirl the pan.

    Add the apples to the pan, rounded side down, arranging them tightly in a circular pattern. Cook for 10 minutes until the apples soften slightly and release their juices.

    Roll out the puff pastry and cut a circle slightly larger than your pan.

    Place the pastry over the apples, tucking the edges down into the sides of the pan.

    Bake for 25-30 minutes until the pastry is golden brown and crisp.

    Allow to cool for 5 minutes, then carefully invert the tart onto a large serving plate while still warm.

    Serve immediately with a dollop of crème fraîche or vanilla ice cream.
