Ingredients
- 8 pieces Corn tortillas
- 15 oz can Black beans
- 2 large Avocado
- 2 cups Shredded lettuce
- 1 teaspoon Cumin
- 1 tablespoon Lime juice
- 0.5 cup Crumbled cotija cheese(optional)
- 2 tablespoons Vegetable oil

Heat the vegetable oil in a skillet over medium-high heat. Fry each corn tortilla for about 1-2 minutes per side until golden and crispy. Drain on paper towels.

In a small saucepan, heat the black beans with the cumin and a splash of water. Mash about half of the beans with a fork to create a creamy texture.

In a small bowl, mash the avocados with lime juice and a pinch of salt.

To assemble, spread a layer of mashed black beans onto each crispy tortilla.

Top with a dollop of mashed avocado, shredded lettuce, and crumbled cotija cheese.
