Ingredients
- 4 large Flour tortillas
- 1 cup Canned black beans
- 1.5 cups Shredded cheddar cheese
- 2 cups Fresh baby spinach
- 0.5 teaspoon Cumin
- 1 tablespoon Olive oil
- 0.25 cup Salsa(optional)
Instructions

Rinse and drain the black beans, then toss them in a small bowl with the cumin.

Place a large skillet over medium heat and add a small amount of olive oil.

Lay one tortilla in the skillet and sprinkle a layer of cheese over one half.

Add a layer of black beans and a handful of spinach over the cheese, then top with a bit more cheese to act as glue.

Fold the tortilla in half and cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.

Repeat with the remaining ingredients.

Slice into wedges and serve warm with salsa if desired.
