Vegetarian Pho

A fragrant Vietnamese noodle soup with a charred onion and ginger broth topped with fresh herbs.

Ingredients

  • 12 oz Rice noodles (pho style)
  • 8 cups Vegetable broth
  • 1 large Yellow onion, halved
  • 3 inches Fresh ginger, sliced
  • 4 whole Star anise
  • 1 whole Cinnamon stick
  • 3 tbsp Soy sauce
  • 14 oz Firm tofu, cubed
  • 1 bunch Fresh cilantro and Thai basil
  • 1 cup Bean sprouts
  • 2 tbsp Hoisin sauce(optional)

Instructions

    Char the onion and ginger over an open flame or under a broiler until blackened in spots to develop deep flavor.

    In a large pot, toast the star anise and cinnamon stick for 2 minutes until fragrant.

    Add the vegetable broth, charred onion, ginger, and soy sauce to the pot. Simmer uncovered for at least 30 minutes.

    While the broth simmers, prepare the rice noodles according to package instructions and set aside.

    Strain the broth to remove the solids and return the liquid to the pot. Season with salt or more soy sauce if needed.

    Divide the cooked noodles and tofu cubes into four deep bowls.

    Ladle the hot broth over the noodles and tofu.

    Serve immediately with fresh herbs, bean sprouts, and hoisin sauce on the side.
