Ingredients

Servings:4
  • 3 cups Long-grain parboiled rice
  • 4 cups Vegetable broth
  • 2 tablespoons Curry powder (Nigerian style)
  • 1 teaspoon Turmeric powder
  • 3 tablespoons Vegetable oil
  • 1 cup Carrots, finely diced
  • 1/2 cup Green beans, chopped
  • 1/2 cup Sweet corn
  • 1/2 cup Green peas
  • 1 medium Red bell pepper, diced
  • 1 large Onion, finely chopped
  • 1 teaspoon Thyme (dried)

Instructions

  1. 1

Wash the parboiled rice thoroughly in warm water to remove excess starch until the water runs clear.

  2. 2

Place the rice in a pot with the vegetable broth, 1 tablespoon of curry powder, and salt; boil until the rice is cooked 'al dente' and the liquid is absorbed.

  3. 3

Spread the cooked rice on a large tray to cool completely; this prevents the fried rice from becoming soggy.

  4. 4

Heat the vegetable oil in a large wok or deep frying pan over medium-high heat.

  5. 5

Sauté the onions, carrots, and green beans for 3-4 minutes until they begin to soften.

  6. 6

Add the bell peppers, sweet corn, peas, remaining curry powder, turmeric, and thyme, stirring constantly for 2 minutes.

  7. 7

Add the cooled rice to the pan in small batches, stir-frying vigorously after each addition to ensure every grain is coated in oil and spices.

  8. 8

Adjust seasoning with salt or a vegetable bouillon cube if needed, and serve hot.
