- 3 cups Long-grain parboiled rice
- 4 cups Vegetable broth
- 2 tablespoons Curry powder (Nigerian style)
- 1 teaspoon Turmeric powder
- 3 tablespoons Vegetable oil
- 1 cup Carrots, finely diced
- 1/2 cup Green beans, chopped
- 1/2 cup Sweet corn
- 1/2 cup Green peas
- 1 medium Red bell pepper, diced
- 1 large Onion, finely chopped
- 1 teaspoon Thyme (dried)

Wash the parboiled rice thoroughly in warm water to remove excess starch until the water runs clear.

Place the rice in a pot with the vegetable broth, 1 tablespoon of curry powder, and salt; boil until the rice is cooked 'al dente' and the liquid is absorbed.

Spread the cooked rice on a large tray to cool completely; this prevents the fried rice from becoming soggy.

Heat the vegetable oil in a large wok or deep frying pan over medium-high heat.

Sauté the onions, carrots, and green beans for 3-4 minutes until they begin to soften.
