Vegetable Samosas

Crispy, deep-fried pastry triangles stuffed with a savory spiced potato and pea filling.

Ingredients

  • 2 cups All-purpose flour
  • 3 medium Potatoes
  • 0.5 cup Green peas
  • 4 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 1 finely chopped Green chili(optional)
  • 1 teaspoon Salt
  • 0.5 cup Water

    In a large bowl, mix flour, salt, and 2 tablespoons of oil. Gradually add water to knead into a stiff dough. Cover and rest for 20 minutes.

    Boil, peel, and mash the potatoes into small chunks.

    Heat 1 tablespoon of oil in a pan. Add cumin seeds and let them sizzle. Add green chilies, peas, and spices. Sauté for 2 minutes.

    Add the potatoes and salt to the pan. Mix well and cook for 5 minutes. Let the filling cool completely.

    Divide the dough into 6 equal balls. Roll each ball into an oval shape and cut in half to create two semi-circles.

    Fold each semi-circle into a cone shape, sealing the edge with a little water.

    Stuff the cone with the potato mixture and seal the top edge firmly.

    Heat oil for deep frying in a heavy-bottomed pan. Fry the samosas on low-medium heat until golden brown and crisp.

    Drain on paper towels and serve hot with chutney.
