  • 1 cup Rava (Semolina/Suji)
  • 2 large Tomatoes (finely chopped)
  • 1 medium Onion (finely chopped)
  • 2 1/2 cups Water
  • 2 tablespoons Oil or Ghee
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Urad Dal
  • 2 pieces Green Chillies (slit)
  • 1 teaspoon Ginger (finely grated)
  • 10 leaves Curry Leaves
  • 1/4 teaspoon Turmeric Powder
  • 2 tablespoons Fresh Cilantro (chopped)(optional)

Instructions

    Dry roast the rava in a pan on medium flame for 3-5 minutes until it becomes fragrant and slightly changes color, then set aside.

    Heat oil or ghee in a heavy-bottomed pan and add mustard seeds; once they splutter, add urad dal and fry until golden brown.

    Add the chopped onions, green chillies, ginger, and curry leaves, sautéing until the onions become translucent.

    Add the chopped tomatoes, turmeric powder, and salt; cook until the tomatoes turn soft and mushy.

    Pour in the water and bring it to a rolling boil.

    Slowly pour the roasted rava into the boiling water with one hand while stirring continuously with the other to prevent lumps.

    Cover the pan with a lid and cook on low heat for 2-3 minutes until the water is completely absorbed and the rava is cooked.

    Garnish with fresh cilantro and a teaspoon of ghee before serving hot with coconut chutney.
