Stuffed Tostones (Tostones Rellenos)

Ingredients
- 3 large Green plantains
- 2 cups Vegetable oil for frying
- 1 pound Ground beef
- 2 tablespoons Sofrito
- 1/2 cup Tomato sauce
- 1 teaspoon Adobo seasoning
- 1 packet Sazon with Culantro and Achiote
- 2 cloves Garlic cloves, minced
- 2 tablespoons Pitted green olives, chopped
- 1 pinch Salt and pepper(optional)

Peel the plantains and cut them into 1.5-inch thick rounds.

In a large skillet, heat oil over medium heat and fry the plantain chunks for 3-4 minutes per side until light golden but not browned.

While plantains fry, brown the ground beef in a separate pan, draining excess fat.

Add sofrito, garlic, tomato sauce, adobo, sazon, and olives to the beef; simmer on low for 10 minutes until thickened.

Remove plantains from oil and immediately press them into a 'cup' shape using a tostonera cup mold or a lemon squeezer lined with plastic wrap.

Increase the oil heat to medium-high and fry the plantain cups a second time for 2 minutes until deep golden and crispy.

Drain the cups on paper towels and sprinkle lightly with salt.

Fill each crispy plantain cup with a generous spoonful of the beef picadillo and serve warm.
