Steak Fajitas

Ingredients

  • 1.5 lbs Flank steak
  • 3 medium Bell peppers, assorted colors
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 2 tablespoons Lime juice
  • 8 small Flour tortillas
  • 0.5 cup Sour cream(optional)

Instructions

    Slice the flank steak against the grain into thin strips.

    In a small bowl, mix chili powder, cumin, garlic powder, salt, and pepper.

    Toss the steak strips with half of the spice mix and 1 tablespoon of lime juice.

    Slice the peppers and onions into thin strips and toss with the remaining spice mix.

    Heat 1 tablespoon of oil in a large cast-iron skillet over high heat until smoking.

    Add the steak in a single layer and sear for 2-3 minutes until browned; remove from skillet and set aside.

    Add the remaining oil to the skillet and sauté the peppers and onions for 5-6 minutes until softened and slightly charred.

    Return the steak to the skillet, add the remaining lime juice, and toss everything together for 1 minute.

    Serve immediately with warmed tortillas and optional toppings.
