Stand Mixer Pounded Yam

Ingredients
- 2 pounds Puna Yam (African Yam)
- 6 cups Water for boiling
- 1/2 cup Hot water for consistency(optional)
- 1 teaspoon Salt
- 1 teaspoon Vegetable oil (to grease bowl)
- 1 tablespoon Butter(optional)
- 1/4 teaspoon Garlic powder(optional)
- 1/4 teaspoon Onion powder(optional)

Peel the yam tubers, remove any dark spots, and cut them into medium-sized cubes.

Rinse the yam cubes thoroughly in cold water to remove excess starch.

Place the yams in a large pot, add 6 cups of water and salt, then boil for 20-25 minutes until very soft and easily pierced with a fork.

Drain the water completely and immediately transfer the hot yam chunks into the bowl of a stand mixer.

Attach the paddle attachment and start mixing on low speed to break the chunks into a mash.

Increase the speed to medium-high and beat for 3 to 5 minutes until the yam becomes smooth, stretchy, and dough-like.

If the mixture is too stiff, add 1-2 tablespoons of the reserved hot cooking water and continue mixing until desired elasticity is reached.

Lightly grease your hands or a bowl with oil to shape the pounded yam into smooth balls for serving.
