Ingredients
- 4 cups All-purpose flour
- 0.5 cup Granulated sugar
- 0.5 cup Unsalted butter, chilled
- 0.75 cup Whole milk
- 1 piece Large egg
- 1.5 tablespoons Dried chili flakes
- 1 teaspoon Ground ginger
- 0.5 teaspoon Baking powder
- 0.5 teaspoon Salt
- 1 quart Vegetable oil for frying
Instructions
- 1
In a large mixing bowl, whisk together the flour, sugar, chili flakes, ground ginger, baking powder, and salt.
- 2
Cut the chilled butter into small cubes and rub it into the flour mixture with your fingertips until it resembles coarse crumbs.
- 3
In a separate small bowl, beat the egg and milk together, then slowly pour into the dry ingredients.
- 4
Knead the mixture gently until a smooth, stiff dough forms; do not overwork the dough or it will become too tough.
- 5
Divide the dough into four parts and roll each out on a lightly floured surface to about 1/4 inch thickness.
- 6
Use a pizza cutter or knife to cut the dough into small 1-inch squares or strips.
- 7
Heat the vegetable oil in a deep pan to 350°F (175°C) and fry the dough pieces in batches until golden brown.
- 8
Remove with a slotted spoon and drain on paper towels, allowing them to cool completely to achieve maximum crunch.
