
Spicy Kitfo Sliders
Kitfo-style minced beef served on small rolls, inspired by West African street food presentation.

Ingredients
- 1 lb Lean ground beef (top round or sirloin)
- 3 tbsp Niter Kibbeh (Ethiopian spiced clarified butter)
- 2 tsp Mitmita (spicy chili powder blend)
- 1 tbsp Suya spice (Yaji) for dusting
- 12 pieces Mini brioche slider rolls
- 0.5 cup Red onion, finely diced
- 1 tsp Fresh ginger, minced
- 0.5 cup Ayib (Ethiopian cottage cheese) or mild feta
- 12 slices Sliced cucumber(optional)

Place the lean ground beef in a medium mixing bowl and ensure it is at room temperature.

Melt the Niter Kibbeh in a small pan over very low heat until liquid but not sizzling hot.

Stir the Mitmita, salt, and minced ginger into the melted butter to infuse the flavors.

Pour the spiced butter mixture over the raw beef and mix thoroughly with a fork until the meat is evenly coated and slightly warmed by the butter.

Slice the slider rolls in half and lightly toast them until the edges are golden brown.

Place a generous spoonful of the Kitfo mixture onto the bottom half of each toasted roll.

Top the meat with a sprinkle of Suya spice, a dollop of Ayib cheese, and a few diced onions for crunch.
