- 2 cans (5oz each) Canned tuna in water, drained
- 1/4 cup Mayonnaise
- 2 tablespoons Pickled jalapeños, diced
- 1 teaspoon Sriracha or hot sauce
- 2 tablespoons Red onion, finely minced
- 1 stalk Celery, finely diced
- 4 slices Sharp cheddar cheese slices
- 4 slices Sourdough bread
- 2 tablespoons Unsalted butter, softened
- 1 tablespoon Fresh cilantro, chopped(optional)
- 1/4 teaspoon Black pepper

In a medium bowl, combine the drained tuna, mayonnaise, diced jalapeños, sriracha, red onion, celery, and black pepper.

Mix the ingredients thoroughly with a fork, breaking up large tuna chunks until the mixture is creamy and well-combined.

Butter one side of each slice of sourdough bread evenly.

Place two slices of bread, butter-side down, in a cold non-stick skillet or griddle.

Divide the tuna mixture evenly between the two slices in the skillet, spreading it to the edges.

Place two slices of cheddar cheese over the tuna on each sandwich, then top with the remaining bread slices, butter-side up.
