Ingredients

Servings:4
  • 1 pound Ground beef (80/20)
  • 1 unit Small yellow onion, diced
  • 1 tablespoon Smoked paprika
  • 1/2 cup Smoky barbecue sauce
  • 1/2 cup Shredded sharp cheddar cheese
  • 12 units Empanada dough discs
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt and black pepper
  • 1 unit Egg (for wash)
  • 1/2 teaspoon Cumin

Instructions

  1. 1

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

  2. 2

In a large skillet over medium-high heat, brown the ground beef and diced onions until the meat is cooked through and onions are translucent.

  3. 3

Drain any excess grease from the skillet, then stir in the smoked paprika, garlic powder, cumin, salt, pepper, and barbecue sauce.

  4. 4

Simmer the beef mixture for 3-5 minutes until the sauce thickens slightly, then remove from heat and let it cool for 10 minutes.

  5. 5

Stir the shredded cheddar cheese into the cooled beef mixture.

  6. 6

Place a spoonful of the beef filling onto the center of each empanada disc, leaving a small border around the edges.

  7. 7

Fold the discs in half to create a half-moon shape and crimp the edges firmly with a fork to seal.

  8. 8

Brush the tops of the empanadas with a beaten egg wash and bake for 20-25 minutes until golden brown and crispy.
