- 1 pound Ground beef (80/20)
- 1 unit Small yellow onion, diced
- 1 tablespoon Smoked paprika
- 1/2 cup Smoky barbecue sauce
- 1/2 cup Shredded sharp cheddar cheese
- 12 units Empanada dough discs
- 1 teaspoon Garlic powder
- 1/2 teaspoon Salt and black pepper
- 1 unit Egg (for wash)
- 1/2 teaspoon Cumin

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

In a large skillet over medium-high heat, brown the ground beef and diced onions until the meat is cooked through and onions are translucent.

Drain any excess grease from the skillet, then stir in the smoked paprika, garlic powder, cumin, salt, pepper, and barbecue sauce.

Simmer the beef mixture for 3-5 minutes until the sauce thickens slightly, then remove from heat and let it cool for 10 minutes.

Stir the shredded cheddar cheese into the cooled beef mixture.

Place a spoonful of the beef filling onto the center of each empanada disc, leaving a small border around the edges.

Fold the discs in half to create a half-moon shape and crimp the edges firmly with a fork to seal.
