- 2 cups Greek yogurt (full fat)
- 1/2 teaspoon Kosher salt
- 1 1/2 teaspoons Smoked paprika (Pimentón)
- 2 tablespoons Wildflower honey
- 1 tablespoon Extra virgin olive oil
- 1 teaspoon Lemon zest
- 1 teaspoon Fresh thyme leaves(optional)
- 1/4 teaspoon Crushed red pepper flakes(optional)
- 1 tablespoon Toasted pine nuts(optional)
- 4 pieces Warm pita bread

Line a fine-mesh sieve with two layers of cheesecloth and place it over a deep bowl.

Mix the Greek yogurt and kosher salt together in a small bowl until well combined.

Transfer the yogurt mixture to the cheesecloth, gather the edges, and tie them with a string or rubber band.

Refrigerate the yogurt for at least 12 to 24 hours to allow the whey to drain, resulting in a thick labneh consistency.

Remove the labneh from the cheesecloth and spread it onto a shallow serving plate using the back of a spoon to create swirls.

In a small ramekin, whisk together the honey and smoked paprika until smooth.
