- 3 pounds Beef Chuck Roast
- 2 large Yellow Onions, thinly sliced
- 6 cloves Garlic Cloves, minced
- 1 cup Beef Broth
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Rosemary
- 2 tablespoons Olive Oil
- 1 1/2 teaspoons Salt
- 1 teaspoon Black Pepper
- 2 tablespoons Cornstarch (for gravy)(optional)

Pat the beef roast dry with paper towels and season generously on all sides with salt and pepper.

Heat olive oil in a large skillet over medium-high heat and sear the beef until browned on all sides, about 3-4 minutes per side.

Place the sliced onions and minced garlic at the bottom of the slow cooker insert.

Place the seared roast on top of the onions and garlic.

In a small bowl, whisk together the beef broth, Worcestershire sauce, thyme, and rosemary, then pour it over the roast.

Cover and cook on Low for 8-10 hours or on High for 5-6 hours until the beef is fork-tender.

Remove the roast to a serving platter and tent with foil to rest for 10 minutes.

Optional: Strain the remaining juices into a saucepan, whisk in a cornstarch slurry, and simmer until thickened to create a savory gravy.
