Slow-Cooker Chicken Mole

Ingredients
- 2 lbs Chicken thighs, boneless and skinless
- 8 oz Mole sauce paste
- 2 cups Chicken broth
- 15 oz Crushed tomatoes
- 1 oz Dark chocolate (70% cocoa)
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 1 tbsp Sesame seeds(optional)
- 0.25 cup Fresh cilantro(optional)
Instructions

Place the diced onion and minced garlic at the bottom of the slow cooker.

Lay the chicken thighs over the onions.

In a medium bowl, whisk together the mole paste, chicken broth, and crushed tomatoes until the paste is mostly dissolved.

Pour the sauce mixture over the chicken.

Add the piece of dark chocolate into the center of the liquid.

Cover and cook on Low for 6 to 7 hours or on High for 3 to 4 hours.

Once finished, shred the chicken slightly with two forks and stir to incorporate the melted chocolate and juices.

Garnish with sesame seeds and fresh cilantro before serving over rice or with warm tortillas.
