Sinigang Na Isda Sa Miso

Ingredients
- 500 grams Milkfish (Bangus) or Red Snapper, sliced into steaks
- 3 tablespoons Yellow Miso paste
- 40 grams Tamarind soup base powder
- 2 pieces Tomatoes, quartered
- 1 medium Onion, sliced
- 1 thumb-sized piece Ginger, sliced into thin strips
- 1 cup Radish (Labanos), sliced diagonally
- 1 bunch Mustard greens (Mustasa) or Bok Choy
- 2 pieces Long green chili (Siling haba)
- 6 cups Water or rice wash
- 2 tablespoons Fish sauce (Patis)(optional)
- 1 tablespoon Cooking oil
Instructions

Heat oil in a large pot and sauté the ginger, onion, and tomatoes until softened.

Add the miso paste and cook for 2 minutes, stirring constantly to release its savory aroma.

Pour in the water or rice wash and bring to a boil.

Add the tamarind powder and stir until fully dissolved.

Gently add the fish slices and radish; simmer for 8 to 10 minutes until the fish is cooked through.

Add the long green chilies and season with fish sauce to taste.

Add the mustard greens and turn off the heat, allowing the residual heat to wilt the leaves.
