Sicilian Grilled Sardines with Pine Nuts

Ingredients
- 12 pieces Fresh whole sardines, scaled and butterflied
- 1 cup Toasted breadcrumbs
- 1/4 cup Toasted pine nuts
- 1/4 cup Golden raisins, soaked in warm water
- 2 tablespoons Fresh parsley, finely chopped
- 1/2 cup Extra virgin olive oil
- 2 tablespoons Lemon juice
- 1 piece Garlic clove, minced
- 1 teaspoon Dried oregano
- 1/2 teaspoon Sea salt
- 1/4 teaspoon Black pepper
- 12 pieces Fresh bay leaves(optional)

In a medium mixing bowl, combine the toasted breadcrumbs, pine nuts, drained raisins, minced garlic, and parsley.

Add 2 tablespoons of olive oil to the breadcrumb mixture and stir until it reaches the consistency of damp sand.

Lay the butterflied sardines flat on a clean surface, skin-side down, and season lightly with salt and pepper.

Place a small spoonful of the stuffing onto the center of each sardine, then roll the fish from head to tail to enclose the filling.

Thread the rolled sardines onto skewers, alternating each fish with a fresh bay leaf to keep them secure and add aroma.

Whisk the remaining olive oil with the lemon juice and dried oregano, then brush the mixture generously over the prepared skewers.

Preheat a grill or grill pan to medium-high heat and lightly oil the grates to prevent sticking.

Grill the sardines for 3 minutes per side until the skin is charred and crispy and the fish is opaque throughout.
