Ingredients
- 12 pieces Fresh shiitake mushrooms (large)
- 2 tablespoons Unsalted butter
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 1 tablespoon Sake
- 1 teaspoon Sugar
- 1 teaspoon Vegetable oil
- 0.5 teaspoon Toasted sesame seeds(optional)
- 4 pieces Bamboo skewers

Soak the bamboo skewers in water for at least 20 minutes to prevent them from burning on the grill.

Clean the shiitake mushrooms with a damp paper towel and remove the tough stems.

In a small saucepan, melt the butter over low heat and whisk in the soy sauce, mirin, sake, and sugar until the sugar dissolves.

Thread 3 shiitake mushrooms onto each skewer, piercing through the center of the caps.

Lightly brush a grill pan or outdoor grill with vegetable oil and heat to medium-high.

Place the skewers on the grill and cook for 3 minutes per side until the mushrooms soften and develop grill marks.

Generously brush the butter-soy glaze over the mushrooms during the last 2 minutes of cooking, turning frequently to caramelize without burning.

Remove from heat, drizzle with any remaining glaze, and sprinkle with toasted sesame seeds before serving.
