Ingredients

  • 1 lb Italian Sausages
  • 3 large Bell Peppers (mixed colors)
  • 1 medium Red Onion
  • 2 tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 2 tbsp Fresh Parsley(optional)

    Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet.

    Slice the bell peppers and red onion into 1/2-inch wide strips.

    Cut the Italian sausages into 1-inch thick rounds, or leave them whole if preferred.

    Place the peppers, onions, and sausages onto the prepared sheet pan.

    Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss with your hands or tongs until everything is evenly coated.

    Spread the mixture into a single layer across the pan.

    Roast for 20-25 minutes, tossing halfway through, until the sausages are browned and the vegetables are tender and slightly charred.
