Sesame Ginger Tofu Stir-Fry

Ingredients
- 14 oz Extra-firm tofu
- 2 cups Broccoli florets
- 1 medium Bell pepper
- 3 tbsp Soy sauce
- 1 tbsp Fresh ginger, minced
- 1 tbsp Toasted sesame oil
- 1 tbsp Cornstarch
- 2 cloves Garlic, minced
- 1 tbsp Honey or Maple syrup
- 1 tsp Sesame seeds(optional)

Press the tofu for 10 minutes to remove excess moisture, then cut into 1-inch cubes.

Toss tofu cubes with half of the cornstarch until lightly coated.

In a small bowl, whisk together soy sauce, ginger, garlic, sweetener, and remaining cornstarch to create the sauce.

Heat sesame oil in a large skillet or wok over medium-high heat. Fry tofu until golden and crispy on all sides, about 8 minutes. Remove and set aside.

In the same pan, add broccoli and bell peppers with a splash of water. Cover and steam for 3 minutes until tender-crisp.

Return tofu to the pan and pour the sauce over the mixture.

Stir-fry for 1-2 minutes until the sauce thickens and coats everything evenly.

Garnish with sesame seeds and serve hot over rice or noodles.
