- 8 ounces Dried soba noodles
- 3 tablespoons Roasted white sesame seeds
- 2 tablespoons Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Toasted sesame oil
- 1 teaspoon Honey
- 1 teaspoon Fresh ginger, grated
- 2 tablespoons Mayonnaise
- 2 stalks Scallions, thinly sliced
- 0.5 cup Cucumber, julienned(optional)

Bring a large pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-5 minutes.

Immediately drain the noodles and rinse them under cold running water, rubbing them gently to remove excess starch.

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and mayonnaise until smooth.

Using a mortar and pestle or a spice grinder, lightly crush the roasted sesame seeds to release their aroma, then stir them into the dressing.

Place the cold, drained noodles into a large mixing bowl.
