Ingredients

  • 2 large Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Cumin
  • 8 pieces Corn tortillas
  • 1 can Black beans
  • 1 whole Avocado
  • 1 whole Lime
  • 0.25 cup Cilantro(optional)

Instructions

    Preheat oven to 400°F (200°C).

    Peel and cube the sweet potatoes into 1/2-inch pieces.

    Toss sweet potatoes with olive oil, chili powder, cumin, salt, and pepper on a baking sheet.

    Roast for 20-25 minutes until tender and slightly browned.

    Warm the black beans in a small saucepan over medium heat.

    Heat the tortillas in a dry skillet or directly over a gas flame for 30 seconds per side.
