Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
In a small bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and a pinch of salt to create the base sauce.
Pat the paneer cubes dry with a paper towel to ensure they get crispy when roasting.
In a large mixing bowl, toss the paneer cubes and green peas with olive oil, za'atar spice, and chili flakes until evenly coated.
Spread the paneer and peas in a single layer on the prepared baking sheet.
Roast for 15-20 minutes, flipping the paneer halfway through, until the edges are golden brown and the peas are slightly blistered.
Spread the garlic yogurt onto a serving platter or individual plates.
Top the yogurt with the roasted paneer and peas, then garnish with fresh mint before serving.
