Quinoa and Black Bean Tacos

Ingredients
- 1 cup Quinoa
- 15 oz can Black beans
- 2 cups Vegetable broth
- 2 tablespoons Taco seasoning
- 8 pieces Corn tortillas
- 1 tablespoon Lime juice
- 0.25 cup Fresh cilantro(optional)
- 1 whole Avocado(optional)

Rinse the quinoa under cold water until the water runs clear.

In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

While quinoa cooks, drain and rinse the black beans.

Once quinoa is cooked and liquid is absorbed, fluff with a fork and stir in the black beans and taco seasoning.

Cook the mixture over low heat for an additional 3-5 minutes until the beans are heated through.

Stir in the lime juice and chopped cilantro.

Warm the corn tortillas in a dry skillet or microwave.

Spoon the quinoa and bean mixture into tortillas and top with sliced avocado.
