Quinoa and Black Bean Stuffed Peppers

Bell peppers packed with a zesty mixture of quinoa, black beans, corn, and melted cheddar cheese.

Ingredients

  • 4 large Bell peppers
  • 2 cups Cooked quinoa
  • 1 can Black beans
  • 1 cup Corn kernels
  • 0.5 cup Salsa
  • 1 tsp Cumin
  • 1 cup Shredded cheddar cheese
  • 2 tbsp Fresh cilantro(optional)

Instructions

    Preheat your oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes.

    In a large bowl, combine the cooked quinoa, drained black beans, corn, salsa, cumin, and half of the cheese.

    Stuff each pepper tightly with the quinoa mixture and place them upright in a baking dish.

    Add a small amount of water to the bottom of the dish and cover with foil.

    Bake for 30 minutes, then remove foil, sprinkle with remaining cheese, and bake for another 5 minutes until cheese is bubbly.

    Garnish with cilantro before serving.
