  • 1/2 lb Pork loin, thinly sliced into strips
  • 6 cups Chicken broth
  • 1 cup Fresh shiitake mushrooms, sliced
  • 1/2 cup Bamboo shoots, shredded
  • 3 tbsp Soy sauce
  • 1/4 cup Rice vinegar
  • 1 tsp Ground white pepper
  • 3 tbsp Cornstarch
  • 1 large Egg, lightly beaten
  • 1/2 cup Firm tofu, cut into matchsticks(optional)
  • 1 tsp Sesame oil
  • 2 stalks Green onions, sliced

Instructions

    In a large pot, bring the chicken broth to a simmer over medium-high heat.

    Add the pork strips, mushrooms, and bamboo shoots to the simmering broth and cook for 5 minutes.

    Stir in the soy sauce, rice vinegar, and white pepper, adjusting the pepper to your preferred spice level.

    In a small bowl, whisk the cornstarch with 3 tablespoons of cold water to create a slurry.

    Slowly pour the slurry into the soup while stirring constantly until the liquid thickens slightly.

    Reduce heat to low and slowly drizzle the beaten egg into the soup in a circular motion to create egg ribbons.
