Pork and Chive Dumplings

Ingredients
- 1 lb Ground pork
- 2 cups Garlic chives
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 1 tbsp Fresh ginger, minced
- 40 pieces Dumpling wrappers
- 1 tbsp Shaoxing wine(optional)
- 0.5 tsp White pepper
Instructions

Finely chop the garlic chives and place them in a large mixing bowl.

Add the ground pork, soy sauce, sesame oil, minced ginger, white pepper, and Shaoxing wine to the bowl.

Mix the filling vigorously in one direction until the meat becomes tacky and well-combined.

Place a small spoonful of filling in the center of a dumpling wrapper.

Moisten the edges of the wrapper with water, fold in half, and pleat the edges to seal tightly.

To cook, bring a large pot of water to a boil. Drop dumplings in and cook until they float, then add a splash of cold water and bring back to a boil (repeat twice).

Alternatively, pan-fry in a lightly oiled skillet until bottoms are golden, add 1/4 cup water, cover, and steam until water evaporates.

Serve hot with a dipping sauce of soy sauce and black vinegar.
