
Papas Chorreadas
Boiled potatoes smothered in a rich sauce of tomatoes, onions, and melted cheese.

Ingredients
- 2 lbs Red potatoes
- 1 cup Scallions, chopped
- 2 cups Tomatoes, diced
- 0.5 cup Heavy cream
- 1 cup Mozzarella or Queso Blanco, shredded
- 2 tbsp Butter
- 0.5 tsp Cumin
- to taste Salt and Pepper
- 1 tbsp Fresh cilantro, chopped(optional)
Instructions

Place the potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 20-25 minutes. Drain and set aside.

While potatoes cook, melt butter in a large skillet over medium heat.

Add the scallions and tomatoes to the skillet. Sauté for about 8-10 minutes until the vegetables are soft and form a sauce-like consistency.

Stir in the cumin, salt, and pepper.

Reduce heat to low and pour in the heavy cream. Stir well to combine.

Add the shredded cheese to the sauce and stir until melted and bubbly.

Place the cooked potatoes on a serving platter and pour the cheese and tomato sauce over them so they are 'dripping' (chorreadas).

Garnish with fresh cilantro if desired and serve immediately.
