Ingredients

  • 1 kg Small new potatoes or baby potatoes
  • 250 g Sea salt
  • 1 liter Water
  • 1 piece Lemon slice(optional)

Instructions

    Wash the potatoes thoroughly, leaving the skins on. Do not peel.

    Place the potatoes in a large pot and add enough water to just barely cover them.

  3. 3

    Add the sea salt and the optional lemon slice. The water should be very salty, mimicking seawater.

    Bring to a boil, then reduce to medium heat. Simmer uncovered for about 20 minutes or until the potatoes are tender when pierced with a fork.

    Drain all the water from the pot.

    Place the pot back on the warm stove over low heat. Shake the pot gently for 2-3 minutes to evaporate any remaining moisture.

    Continue shaking until the potatoes dry out, the skins wrinkle, and a white salt crust forms on the surface.

    Remove from heat and cover with a clean cloth for a few minutes before serving warm.
