Paleo Almond Flour Pancakes

Ingredients

  • 2 cups Almond flour
  • 2 large Eggs
  • 0.25 cup Unsweetened almond milk
  • 2 tablespoons Maple syrup
  • 1 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 1 tablespoon Coconut oil
  • 0.5 teaspoon Ground cinnamon(optional)

Instructions

    In a large mixing bowl, whisk together the almond flour, baking powder, sea salt, and cinnamon until well combined.

    In a separate smaller bowl, beat the eggs and then stir in the almond milk, maple syrup, and vanilla extract.

    Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.

    Heat a non-stick skillet or griddle over medium-low heat and lightly grease with coconut oil.

    Scoop about 3 tablespoons of batter onto the skillet for each pancake, spreading it slightly with the back of the spoon.

    Cook for 3-4 minutes until small bubbles form on the surface and the edges look set.

    Carefully flip the pancakes and cook for an additional 2 minutes until golden brown on both sides.

    Serve warm with fresh berries and an extra drizzle of maple syrup.
