  • 3 cups Black-eyed peas (peeled and soaked)
  • 2 large Red bell peppers (Tatashe)
  • 2 pieces Scotch bonnet peppers (Atarodo)
  • 2 medium Onions
  • 1/2 cup Vegetable oil
  • 1 cup Beef or Chicken stock
  • 3 tablespoons Ground crayfish
  • 3 units Bouillon cubes
  • 1 teaspoon Salt
  • 3 units Hard-boiled eggs(optional)
  • 100 grams Canned Sardines or Corned Beef(optional)
  • 1/2 cup Warm water

    Preheat your oven to 350°F (175°C) and grease a muffin tin or small ramekins with oil.

    Blend the peeled beans, bell peppers, scotch bonnets, and onions with a little water until the mixture is completely smooth and creamy.

    Pour the blended paste into a large mixing bowl and stir in the vegetable oil and stock.

    Add the ground crayfish, crushed bouillon cubes, and salt; whisk the mixture thoroughly for 5 minutes to incorporate air for a fluffy texture.

    Slowly add warm water if the batter is too thick; it should have a consistency slightly thinner than pancake batter.

    Scoop the mixture into the prepared tin or ramekins, filling them about 3/4 full, and add a piece of boiled egg or sardine to each.

    Place the tins in a large baking tray filled with 1 inch of hot water (bain-marie) to keep the Moi Moi moist while baking.

    Cover the tray tightly with aluminum foil and bake for 45 to 55 minutes until a toothpick inserted comes out clean.
