Ingredients
- 1 1/2 cups Basmati Rice
- 2 cups Mixed Vegetables (Carrots, Peas, Beans, Potato)
- 1 large Onion, thinly sliced
- 2 tablespoons Ghee or Oil
- 1 tablespoon Ginger-Garlic Paste
- 1/4 cup Plain Yogurt (Curd)
- 1 tablespoon Biryani Masala Powder
- 1 set Whole Spices (Cinnamon, Cardamom, Cloves, Bay Leaf)
- 2 1/4 cups Water
- 1/2 cup Fresh Mint and Coriander Leaves(optional)
- 1 1/2 teaspoons Salt
Instructions

Rinse the basmati rice until water runs clear, then soak it for 20 minutes and drain.

Heat ghee in the pressure cooker and sauté the whole spices until fragrant.

Add sliced onions and fry until golden brown, then stir in the ginger-garlic paste for one minute.

Add the mixed vegetables, biryani masala, and salt, sautéing for 2-3 minutes.

Whisk the yogurt and pour it in, stirring constantly to prevent curdling, followed by half of the mint and coriander.

Add the drained rice and gently toss with the vegetables to coat the grains in oil.

Pour in the water, top with remaining herbs, and close the pressure cooker lid.

Cook for 2 whistles on medium heat, then allow the pressure to release naturally before fluffing with a fork.
