Okonomiyaki (Savory Pancake)

Ingredients
- 100 g All-purpose flour
- 120 ml Dashi stock or water
- 2 large Eggs
- 300 g Green cabbage, finely shredded
- 2 stalks Green onions, sliced
- 4 strips Bacon slices or pork belly
- 2 tbsp Okonomiyaki sauce
- 1 tbsp Japanese mayonnaise (Kewpie)
- 1 tsp Pickled red ginger (Beni Shoga)(optional)
- 1 pinch Bonito flakes (Katsuobushi)(optional)
Instructions

In a large bowl, whisk together the flour and dashi stock until smooth.

Add the shredded cabbage, eggs, green onions, and pickled ginger to the batter. Mix gently until the cabbage is evenly coated.

Heat a lightly oiled non-stick skillet over medium heat.

Pour the batter into the skillet, shaping it into a round pancake about 2cm thick.

Place the bacon or pork belly slices on top of the pancake.

Cook for 5 minutes until the bottom is golden brown, then carefully flip the pancake over.

Cover with a lid and cook for another 5 minutes to ensure the cabbage is tender and the pork is crispy.

Flip one last time so the pork side is up. Transfer to a plate.

Brush generously with okonomiyaki sauce, drizzle with mayonnaise, and sprinkle with bonito flakes before serving.
