Mole Verde with Pumpkin Seeds

Ingredients
- 1 1/2 cups Hulled pumpkin seeds (pepitas)
- 1 pound Tomatillos, husked and rinsed
- 2 pieces Serrano peppers, stemmed
- 1/2 cup White onion, chopped
- 3 pieces Garlic cloves, peeled
- 1 cup Fresh cilantro leaves
- 1/4 cup Fresh epazote or parsley
- 2 cups Romaine lettuce leaves, chopped
- 3 cups Chicken or vegetable broth
- 2 tablespoons Vegetable oil or lard
- 1 teaspoon Salt
- 1/4 teaspoon Ground cumin(optional)

Toast the pepitas in a dry skillet over medium heat until they start to pop and turn golden, then let them cool completely.

Grind the toasted pepitas in a spice grinder or high-speed blender until they form a very fine powder.

In a large pot, boil the tomatillos and serrano peppers in water for about 8-10 minutes until soft but not bursting.

Transfer the boiled tomatillos and peppers to a blender; add the onion, garlic, cilantro, epazote, and lettuce leaves.

Blend the vegetable mixture with 1 cup of broth until perfectly smooth and vibrant green.

Heat the oil in a heavy pot, pour in the blended green sauce, and cook over medium heat for 5 minutes, stirring constantly.

Stir in the ground pepitas and the remaining broth, then reduce heat to low and simmer for 20 minutes until thickened.

Season with salt and cumin to taste, and serve over poached chicken or roasted vegetables.
