Ingredients

Servings:3
  • 1 1/2 cups Hulled pumpkin seeds (pepitas)
  • 1 pound Tomatillos, husked and rinsed
  • 2 pieces Serrano peppers, stemmed
  • 1/2 cup White onion, chopped
  • 3 pieces Garlic cloves, peeled
  • 1 cup Fresh cilantro leaves
  • 1/4 cup Fresh epazote or parsley
  • 2 cups Romaine lettuce leaves, chopped
  • 3 cups Chicken or vegetable broth
  • 2 tablespoons Vegetable oil or lard
  • 1 teaspoon Salt
  • 1/4 teaspoon Ground cumin(optional)

Instructions

  1. 1

Toast the pepitas in a dry skillet over medium heat until they start to pop and turn golden, then let them cool completely.

  2. 2

Grind the toasted pepitas in a spice grinder or high-speed blender until they form a very fine powder.

  3. 3

In a large pot, boil the tomatillos and serrano peppers in water for about 8-10 minutes until soft but not bursting.

  4. 4

Transfer the boiled tomatillos and peppers to a blender; add the onion, garlic, cilantro, epazote, and lettuce leaves.

  5. 5

Blend the vegetable mixture with 1 cup of broth until perfectly smooth and vibrant green.

  6. 6

Heat the oil in a heavy pot, pour in the blended green sauce, and cook over medium heat for 5 minutes, stirring constantly.

  7. 7

Stir in the ground pepitas and the remaining broth, then reduce heat to low and simmer for 20 minutes until thickened.

  8. 8

Season with salt and cumin to taste, and serve over poached chicken or roasted vegetables.
