- 1.5 cups Cooked white rice (chilled)
- 2 large Eggs
- 1 tablespoon Soy sauce
- 1 teaspoon Sesame oil
- 0.25 cup Frozen peas and carrots
- 1 stalk Green onions, sliced(optional)
- 0.25 teaspoon Garlic powder

In a large microwave-safe bowl, combine the chilled rice, frozen vegetables, soy sauce, sesame oil, and garlic powder. Stir well to coat the rice.

Cover the bowl with a microwave-safe lid or damp paper towel and microwave on high for 2 minutes.

In a separate small bowl, beat the eggs lightly. Pour the eggs over the hot rice mixture and stir quickly to incorporate.
