Ingredients

  • 1.5 cups Cooked white rice (chilled)
  • 2 large Eggs
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 0.25 cup Frozen peas and carrots
  • 1 stalk Green onions, sliced(optional)
  • 0.25 teaspoon Garlic powder

Instructions

    In a large microwave-safe bowl, combine the chilled rice, frozen vegetables, soy sauce, sesame oil, and garlic powder. Stir well to coat the rice.

    Cover the bowl with a microwave-safe lid or damp paper towel and microwave on high for 2 minutes.

    In a separate small bowl, beat the eggs lightly. Pour the eggs over the hot rice mixture and stir quickly to incorporate.

    Microwave uncovered for 1 minute and 30 seconds. Remove and stir the rice to break up the egg curds.
