- 1 cup All-purpose flour
- 1 cup Water
- 2 tablespoons Unsalted butter
- 1/2 cup Granulated sugar
- 1 tablespoon Ground cinnamon
- 4 ounces Dark chocolate chips
- 1/2 cup Heavy cream
- 1/4 teaspoon Ancho chili powder
- 1 pinch Cayenne pepper(optional)
- 2 cups Vegetable oil for frying
- 1/2 teaspoon Salt

In a small bowl, combine the 0.5 cup sugar and cinnamon for the coating; set aside.

To make the ganache, heat heavy cream until simmering, pour over chocolate chips, add chili powder and cayenne, then whisk until smooth.

In a medium saucepan, combine water, butter, 2 tablespoons of sugar, and salt; bring to a boil over medium-high heat.

Remove from heat and stir in the flour all at once with a wooden spoon until a smooth ball forms.

Transfer the dough to a pastry bag fitted with a large star tip and let it cool for 5 minutes.

Heat oil in a heavy skillet to 375°F (190°C). Pipe 4-inch strips of dough into the oil, cutting with scissors.

Fry churros until golden brown on all sides, about 2 minutes per side, then drain briefly on paper towels.

Toss the warm churros in the cinnamon-sugar mixture and serve immediately with the spiced ganache.
