Ingredients

  • 2 pieces Chicken breast, cubed
  • 2 cups Quinoa, cooked
  • 1 cup Cucumber, diced
  • 0.5 cup Cherry tomatoes, halved
  • 0.25 cup Kalamata olives(optional)
  • 0.25 cup Feta cheese, crumbled
  • 2 tablespoons Red onion, thinly sliced
  • 1 teaspoon Dried oregano
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice

Instructions

    In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat.

    Season the chicken with oregano, salt, and pepper, then cook until golden brown and cooked through (about 8-10 minutes).
