Ingredients
- 1 cup Glutinous rice flour (Mochiko)
- 1 tablespoon Matcha powder
- 0.25 cup Granulated sugar
- 0.75 cup Water
- 0.5 cup Cornstarch or Potato starch
- 0.5 cup Sweet red bean paste (Anko)(optional)

In a microwave-safe glass bowl, whisk together the glutinous rice flour, matcha powder, and sugar until well combined.

Gradually add the water while whisking to ensure there are no lumps in the batter.

Cover the bowl loosely with plastic wrap and microwave on high for 1 minute. Stir the mixture with a wet spatula.

Cover and microwave for another 1 minute. The mixture should become translucent and very sticky. If it is still opaque, microwave for an additional 30 seconds.

Generously dust a clean work surface with cornstarch. Transfer the hot mochi dough onto the starch.

Dust the top of the dough with more starch and flatten it into a rectangle or circle.

Once cool enough to handle, cut the dough into 8 equal pieces.

Optional: Place a small ball of red bean paste in the center of each piece, pinch the edges together to seal, and roll into a ball.

Brush off excess starch and serve at room temperature.
